I want to go into either psychology or graphic design, but right now I’m undecided. I really want to go into the psychology field, and I’m looking at getting my bachelor’s of art in psychology. But if something doesn’t work out and I decide that I don’t want to go for the full eight years, can I get a job in the graphic arts field with that degree since it would apply to visual communication skills?

It’s almost impossible to get a graphic arts job even if you have a degree in that field. A doctorate in psych leads to a good career.
Why not major in both? Graphic design is NOT a BA in psychology, not will you be able to pass for the degree. Try psychology for a bit and see what you think. I bet you head back into graphic design.
If you are willing to build your portfolio to be exceptionally well, better than an applicant who has a good portfolio and the educational background, then there is nothing stopping you from getting a job in the design field with a degree in psychology.
You have to have a knockout portfolio to get a firm or employer’s attention though and you will have to hustle to get them to even look at it. A lot of employers in all fields will not even look at a resume or application if educational requirements, such as a degree in graphic design or related field, are not listed. However, if you can somehow get noticed and you have a great portfolio with a great resume then you have a shot.
You will have to show them what you know about graphic design that the people who received formal training in that field also know. You have to prove that you are just as good as the next applicant, if not better, even though you did not get formal training.
I have learned in the design world that some of the best designers didn’t always get formal education. They are natural artists and taught themselves how to use all the technology and techniques that are used in the design world. Anyone can really teach themselves design with all the resources that we have today (bookstores, libraries, the internet, groups, and more), but you have to have an ability as well and that needs to show in your work. One option for you is to work as a freelance graphic designer, but that takes a lot of hustle, understanding of business and it is a tough spot to be in.
My philosophy is that I want someone who can produce and has exceptional work. At the end of the day, I am really not going to be concerned with how you learned what you learned. If you produce and your work proves to be consistently talented and effective then I want you on my team.
To add: If you truly love psychology then go for that. It is a very good field and if you think that is something you can handle then the job opportunities are there. Different areas need people with training and education in psychology: the military, the state, hospitals, clinics, sports teams, and individuals.
