In photoshop cs you can make the picture black and white by : image, adaptations, less satiety. i hope i typed it all good. :)

Nope. Nothing wrong with your method, but his is definitely faster. New Adjustment Layer/Black n White > Color in with black/white to add back in the color. Only two steps and a layer which is always best.

Couldn’t you just go into the saturation/hue adjustment area, bring down the saturation to your liking (all the way to B&W) and run the history brush over the flowers too? Doesn’t that make for fewer steps?
