What graphic design / animation courses should I take up?

I know wee bit of Corel Draw and Macromedia Flash and little of Photoshop which I learnt myself through its in-built tutorials, online and trial and error. What I don’t know is how to enhance what little I know to make professional looking images (right now they look little amateurish). I would like to >> create logos >> collages >> create images >> do simple animation and basically be able to draw graphics and maintain my website. How do I take a hand drawing and change it into a graphic design?

If I sketch something on paper then scan it, or draw on a tablet, and then I want to take that and enhance it, add to it and color it on computer. What kind of software do I need? Would any graphic design software like Corel Draw or Adobe Illustrator do that? Addendum: I guess what I’m asking is how to change a scanned image into an editable graphic..
